Brisbane’s Cloverly Cupcakes was born from vegan owner Katie’s desire for vegan baked goods. Having grown up with her mum baking her scrumptious treats, Katie found it difficult to be vegan and not be able to enjoy these things she loved. That all changed when Katie ordered a vegan baking book and started baking for her friends, neighbours and for herself. Two years later and Cloverly Cupcakes are the most sought-after cupcakes in Brisbane. And for good reason too.
The most amazing thing about Cloverly Cupcakes is that they don’t taste vegan. Cross out your preconceived thoughts of vegan baked treats as dry and bland because Katie’s cupcakes are anything but. Cloverly Cupcakes are light and fluffy, moist and full of flavour — flavours that you would never expect to be vegan. Like the salted caramel cupcake. It tastes like traditional caramel, but is completely vegan and made from all natural ingredients. How? How?!
Cloverly Cupcakes are always made with wholemeal flour and organic raw sugar, so while the cupcakes are definitely an indulgent treat, it’s worth knowing that they’re made from quality ingredients and are completely free from eggs, dairy and artificial colours and flavours. It seems too good to be true, and even after tasting your third or fourth cupcake, this astonishment never goes away. They’re just that good.
Cloverly Cupcakes are stocked in cafes and health stores all around Brisbane, and the cupcake flavours change weekly. Imagine Chocolicious (double choc cupcake with a raw cacao buttercream), Mocha Coconut (choc coconut cupcake with coffee buttercream), Jaffa (choc orange cupcake with dark chocolate buttercream and dark chocolate ganache), Mint Slice (choc mint cupcake with a mint buttercream and dark chocolate ganache) and Peanut Butter Cup (double choc cupcake with peanut buttercream and chocolate chips).
I was lucky enough to try all of this week’s flavours (a difficult job, I know) and each were simply divine.
The Ferrero Rocher — a rich hazelnut cacao cupcake topped with vanilla buttercream, dark chocolate ganache drizzle and roasted hazelnuts — was just as you would expect. Rich, fluffy and indulgent while still tasting light. The cupcake was bursting with hazelnut chocolate flavour and the roasted hazelnuts on top added a lovely element of texture.
The Red Velvet cupcake, like all of Katie’s cupcakes, had a fluffy and succulent base. The chocolate cupcake was inked with a deep red colour and topped with a light, creamy buttercream. The Lemon Drop cupcake was a burst of zesty deliciousness, with its slightly zingy base pairing beautifully with the creamy cheesecake-like icing. In the centre of the cupcake was a beautiful zesty drop of lemon curd, which brought the cupcake to another level of succulence.
And perhaps my favourite of the four, the gluten free Salted Caramel cupcake. I’m a complete sucker for anything salted caramel, and this cupcake did not disappoint. With a rich chocolate base that was sweet but not too sweet and a creamy caramel icing with just the right amount of saltiness, this cupcake was perfection. And that caramel drizzle detail on top…
One of Katie’s main goals is to convert through food; to promote veganism through showing rather than yelling. And that’s exactly what Cloverly Cupcakes are doing. Non-vegans are enjoying Cloverly Cupcakes just as much and, through this, demonstrating that vegan food does not have to be boring or flavourless. It can be as delicious and bright as these cupcakes.
