I love eating varied breakfasts throughout the week, including porridge/oatmeal, acai/smoothie bowls, avocado & smoked salmon toast and, of course, pancakes. So this next sentence is tough for me to write, but I’m going to come out and say it: baked oatmeal is my favourite breakfast. I feel like a mother who’s admitted to having a favourite child. But — at least at this moment in time — it’s true. I choose baked oatmeal. And in particular, I choose this baked blueberry + banana oatmeal. This sugar-free but delectably sweet, gooey, cinnamony vegan baked oatmeal.
One of the greatest things about this recipe is that it’s quick to prepare. What I tend to do is prepare it the night before, or quickly in the morning, then place it in the oven to bake while I get ready. By the time I’m done, so is breakfast!
Naturally, I want to share my joy about this favourite breakfast of mine with you. I can only hope that it will give you the same sense of warmth and contentment that it gives me. But above all, I hope you find it delicious.
Baked Blueberry + Banana Oatmeal
Makes one serving.
1/2 cup rolled oats
1/2 tsp cinnamon
1 tsp vanilla extract
1 tbsp sultanas or raisins (optional)
1-2 tsp non-dairy milk if needed
2/3 cup frozen or fresh blueberries
seeds or nuts
Preheat your oven to 170 degrees Celsius (340 degree Fahrenheit).
In a small mixing bowl, mix together the oats and cinnamon.
Pour boiling water over the oats just enough to cover them.
While the oats are soaking, chop your banana and add on top of the oats. Also add the vanilla extract, along with the sultanas if you’re adding these in.
Mix the oat and banana mixture until it’s lovely & gooey and well combined. If the mixture is too dry, add 1-2 teaspoons of non-dairy milk of your choice.
Now, in an oven-safe dish or bowl, place the blueberries on the bottom and spread evenly.
Then layer the oat mixture on top of the blueberries and smooth it out.
Place in the oven for 20-25 minutes, or until the top is crispy and blueberries are bubbling through the surface and your house smells like blueberry vanilla heaven.
Remove the baking dish from the oven and add your desired toppings if you prefer.
