I have a love-hate relationship with my waffle iron: sometimes it works and the waffles come out perfectly crisp and fluffy, and other times they are a complete failure and stick to the iron. But this morning Rian and I were craving waffles (though we didn’t want to face possible waffle disappointment), and we kind of had an epiphany moment — why not use my always-successful 3-Ingredient Vegan Pancake recipe?
So we did, and it worked brilliantly. My faith in the waffle iron has been restored, hurrah! The waffles are crisp on the outside, fluffy on the inside, and the oats & vanilla extract give them a naturally sweet flavour. Topped with caramelised banana, raspberries and maple syrup and you have yourself the best vegan waffle, hands down. I hope you enjoy as much as we do!
- 1 cup rolled oats
- 1 cup plant-based milk
- 1 tsp vanilla extract
- Simply place all 3 ingredients in a blender and blend until the batter is well incorporated.
- Preheat your waffle iron and let the waffle batter thicken until the iron is ready.
- Cook the waffles according to your iron’s instructions. We get 2-3 waffles using this recipe, depending on how full we fill the iron, but you may get less or more as waffle iron sizes differ.
- Serve with your favourite toppings. Our go-to is maple syrup, banana, blueberries, raspberries and strawberries. Enjoy!
